Today is #NationalQuesadillaDay:
Sep 25th was designated National Quesadilla Day (Dia de la Quesadilla) in 2020 to bring people together to enjoy authentic and delicious quesadillas.
It is a tortilla is filled with cheese, spices of choice, meats, beans, and vegetables and cooked on a skillet. A simpler way to describe quesadillas would be a flat taco or flat bread sandwich.
The original recipe called for Queso cheese but today people add mozzarella, cheddar, blend of cheeses, anything for the Quesadilla.
Here is a simple corn-broccoli Quesadilla Recipe for fussy little ones in honor of National Quesadilla Day:
Ingredients:
1. 1 cup broccoli florets, chopped really small
2. 1 cup corn, frozen is fine
3. 4 tortillas or wraps of your choice
4. 1/2 cup mozzarella cheese
5. Salt & pepper, a bit of oil
Directions:
1. Heat a bit of oil in a pan
2. Put in broccoli and corn. Cover the pan on low flame for 5 minutes
3. Stir in some oil and black pepper according to taste
4. Remove the broccoli, corn mixture from the pan
5. Clean the pan with a paper towel and spread a bit of oil
6. Heat the tortilla from one side on low flame for a minute
7. Put in the corn-broccoli mixture on one side. Spread cheese on top, fold your tortilla.
8. Cut into triangles and serve
